Kaew thii yuu nai thung nai khrua nii arai na

 

แก้ว ที่อยู่ในถุงในครัวนี่อะไรนะ

Kaew, what’s it in this bag in the kitchen?

Kaew:

aw! nawmai sot sot kha chan dai maa jaak baan

 

อ๋อ หน่อไม้สดๆ ค่ะ
ฉันได้มาจากบ้าน

Oh, yes. That’s the bamboo shoot I brought back from home.

 

waa ja tham aahaan hai khun thaa yen nii

 

ว่าจะทำอาหารให้คุณทานเย็นนี้

I plan to cook it for your dinner.

Gale:

chan mai khoey hen nawmai baep nii maa kawn loey

 

ฉันไม่เคยเห็นหน่อไม้แบบนี้มาก่อนเลย

I’ve never seen this kind of bamboo shoot before.

 

khoey hen tae thii khaai nai suppoemaaket

 

เคยเห็นแต่ที่ขายในซุปเปอร์มาเก็ต

I’ve only seen the kind that’s sold in supermarkets.

Kaew:

aw! nan pen nawmai tom rue mai kaw nawmai dawng

 

อ๋อ นั่นเป็นหน่อไม้ต้ม หรือไม่ก็หน่อไม้ดอง

Ah, that’s the boiled or pickled kind.

 

Nawmai sot sot ja mii chaphoh naafon thaonan kha

 

หน่อไม้สดๆ จะมีเฉพาะหน้าฝนเท่านั้นค่ะ

Fresh bamboo shoots are out only in the rainy season.

 

lae thaa hai sot jing tawng sue maa pawk eng

 

และถ้าจะให้สดจริง ต้องซื้อมาปอกเอง

To get one really fresh, we’ve to buy and peel it ourselves.

Gale:

pawk laew chai tham aahaan dai loey roe

 

ปอกแล้วใช้ทำอาหารได้เลยเหรอ

Can we just cook it right after peeling?

Kaew:

yang kha tawng tom duay namkluea kawn kha khun

 

ยังค่ะ ต้องต้มด้วยนำเกลือก่อนค่ะคุณ

No, we need to boil it in salted water,

 

ao rot khuen thing sie kawn

 

เอารสขื่นทิ้งเสียก่อน

to get rid of acrid taste.

 

laew jueng han hai pen chin chin taam tawngkaan

 

แล้วจึงหั่นให้เป็นชิ้นๆ ตามต้องการ

Then cut it up into pieces to as needed.

Gale:

nawmai thii Kaew ao maa nii yai maak na

 

หน่อไม้ที่แก้วเอามานี่ใหญ่มากนะ

The bamboo shoot you brought back is very big.

Kaew:

kha khun nawmai phaitong ja yai noy

 

ค่ะคุณ หน่อไม้ไผ่ตงจะใหญ่หน่อย

Yes, madam.

 

Pii nii fon dii naw jueng yai awn aroi

ปีนี้ฝนดี หน่อจึงใหญ่ อ่อนอร่อย

This year we have surplus rain, the shoot then get big and deliciously soft.

Gale:

nii rao ja kin mot roe

 

นี่เราจะกินหมดเหรอ

I don’t think we finish all of this?

Kaew:

mai mot mai pen rai kha chan ja dawng wai

 

ไม่หมดไม่เป็นไรค่ะ ฉันจะดองไว้

That’s all right. I’ll pickle it.

Gale:

Kaew dawng yang-ngai roe

 

แก้วดองยังไงเหรอ

How are you going to do that?

Kaew:

han nawmai pen chin baang baang lade chae namkluea

 

หั่นหน่อไม้เป็นชิ้นบางๆ แล้วแช่น้ำเกลือไว้

Slice the shoot into thin slices and soak them in salted water.

 

mai kii wan priew wai kaengsom aroi dii kha

 

ไม่กี่วันก็เปรี้ยว ไว้แกงส้ม อร่อยดีค่ะ

In a few days, they’ll turn sour. Keep them for spicy sour curry. Dilicious!

    naa nawmai

    The rainy season has lingered on for a few months now. Rains have brought us back the lush green surroundings. Back in the villages, a series of rains have softened and fertilised the ground under thick canopy of bamboo leaves. Young plump bamboos are craning up above the ground after shooting out from the moist soil. This safe and highly nutrious variety of vegetables are ready to be collected. It’s bamboo shoot season — naa nawmai  in Thai.

    Bamboo shoots or nawmai  is well liked by a lot of people. These sprouts have been one major preference for vegetables in Asia and the best time to enjoy them fresh is during this wet season.

    Let’s talk about the bamboo shoot season (naa nawmai ) and how to prepare a bamboo shoot.
